Black Cat Burrito (the concept) started taking shape way back in 1998. Megan Carmody and her, then husband, Roland Knoll, were both working in the food industry in Atlanta GA. Megan was a recent graduate from George Tech and had landed a job at Sweet Water Brewing Company. They both worked in the food industry since high school and knew it well. They both loved their work but were itching to get out of Atlanta and had dreams of starting their own restaurant.
After several drinks and late nights scheming with a few close friends, dreams of opening a burrito joint began to take shape. One of these friends lived in Boone and encouraged them to bring their ideas, style and food experience to the High Country. After a few visits, they were hooked.
What is now Black Cat Burrito was built and designed entirely by Megan, Roland and a bunch of dedicated friends. The enormous task of turning an empty storefront into the Boone institution paid off when Black Cat Burrito opened on September 26th, 2000.
No advertising, no grand opening, no signs, nothing… just word of mouth, an open door and some damn good food, brought the masses.
Part luck, part timing, A LOT of hard work, and a whole lot of kick-ass food made Black Cat a success from day one!
Megan remains the owner of Black Cat Burrito today. She is committed to serving amazing food, offering great service and, of course, to keeping the original badass vibe of Black Cat Burrito alive and well.
Our head chef, Kevin Kellum, started washing dishes at Black Cat as a student back in 2000. A lot of years, jobs, experience and further education later, Kevin returned to Black Cat last year to become the head chef of one of his favorite joints. His passion for food drives him to stay true to Black Cat's signature style while enhancing the menu with new and exciting combinations.
